The most important part of this territory is that it is nestled in the northwestern part of the Picos de Europa  National Park. <\/p>\n\n\n\n<p>All the processes necessary to obtain PDO \u201cGamoneu\u201d cheese are carried out in the delimited geographical area.  <\/p>\n<\/div><\/div>\n\n\n\n<h3><strong>Source material <\/strong><\/h3>\n\n\n\n<p>For the elaboration of PDO \u201cGamoneu\u201d cheese, only raw cow, sheep or goat milk will be used, or mixtures of two or of the three types of milk indicated, obtained from flocks that are fed taking advantage of the natural resources of the area, according to the traditional peculiarities linked to geographical and sociological typical factors of the area.<\/p>\n\n\n\n<p>Milk used for the elaboration of the \u201cGamoneu\u201d or \u201cGamonedo\u201d cheese, will be milk of the species and races that are listed below:<\/p>\n\n\n\n<ul><li>Bovine: <em>Frisona, Asturiana de los Valles, Pardo Alpina<\/em> and their crosses with each other.<\/li><li>Sheep: <em>Lacha, Carranzana, Milschalfe<\/em> and their crosses with each other.<\/li><li>Goat: <em>Alpino-Pirenaica, Goat of the Picos de Europa, Murciano-granadina<\/em>, Saanen and their crosses with each other.<\/li><\/ul>\n\n\n\n<p>For the traditional mention \u201cGamoneu\u201d of the Port, a mixture of at least two of the three species must be used, cow, sheep and goats. In any case, quantities of sheep and\/or goat milk must be higher than 10%, for each of the species.<\/p>\n\n\n\n<div class=\"is-layout-flex wp-container-3 wp-block-columns has-2-columns\">\n<div class=\"is-layout-flow wp-block-column\">\n<h4><strong>Physical charecteristics <\/strong><\/h4>\n\n\n\n<ul><li>Shape: cylindrical, with substantially flat faces<\/li><li>Height: from 6 to 15 cm.<\/li><li>Diameter: from 10 to 30 cm.<\/li><li>Weight: between 0.5 and 7 Kgs.<\/li><li>Bark: thin, acquired during the smoking phase, with reddish, green and bluish tones. Outcrops of penicillium.<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"is-layout-flow wp-block-column\">\n<h4> <strong>Chemical characteristics <\/strong><\/h4>\n\n\n\n<ul><li>Fat: Minimum 45% on dry extract<\/li><li>Proteins: Minimum 25% on dry extract<\/li><li>Dry extract: Minimum of 55%<\/li><li>pH: between 4.5 and 6.5<\/li><\/ul>\n<\/div>\n<\/div>\n\n\n\n<h3><strong> Maturation conditions<\/strong><\/h3>\n\n\n\n<div class=\"is-layout-flex wp-container-6 wp-block-columns has-2-columns\">\n<div class=\"is-layout-flow wp-block-column\">\n<p>\nCheese pieces will undergo a process of refining in limestone caves\nand cellars whose characteristics are adequate to give the cheese its\nproperties, with average temperatures and humidity of 10 \u00b0 C and\n90%, respectively. Maturation will last at least two months, counted\nfrom the date of the preparation of the curd.
