Asturian Cheese Producers

Asturias is a region full of mountains and their respective valleys, which made the development of transport routes much slower than in other regions. This fact favored each town conserving different traditions related to their diet. As a result, more than forty varieties of Asturian artisanal cheeses arise, including four Protected Designations of Origin and a Protected Geographical Indication. This wide variety of cheeses makes Asturias one of the most important cheese areas in Europe.

Additional Info              The story of La Chivita begins in 1982 when Jesus, an industrial technical engineer and Josefina, a social worker, one day decided to look for a weekend farmhouse to relieve the stress of the city.

During the tireless search for paradises, they come to a deep reflection. They evaluate pros and cons, until they decide to enjoy the beauty and tranquility of the countryside in a small Asturian town called Buelles. Giving a radical turn to their lives and considering new alternatives.

At the beginning they start with 50 kids brought from Granada of the Murciano-Grenadian breed and begin to shape a handmade product. Being pioneers in the elaboration of goat cheese with raw milk in Asturias, and the breeding of goats in all the north of Spain. It was an important moment in their lives that they will always remember with special affection, although sometimes it will be difficult for them to overcome difficulties. Then the recognition would come to a job well done.

Jesus was always a committed person, which led him in 1988 to be the first president of the Association of Cheesemakers of Asturias.
